Here's how to cook sushi rice:

1. Rinse the rice: Rinse the sushi rice thoroughly under cold water until the water runs clear. This helps remove excess starch and prevents the rice from becoming too sticky.

2. Cook the rice:
- Add 1 cup of sushi rice and 1 cup of water to a rice cooker or pot.
- If you use a rice cooker, follow the machine's instructions.
- If using a pot, bring the water to a boil, then reduce the heat to low, cover, and cook for about 15-20 minutes. Do not lift the lid during cooking.

3. Let the rice rest: Once cooked, remove the rice from the heat and let it rest, covered, for 10-15 minutes so that the steam finishes cooking the rice.

4. Prepare the dressing:
- In a small bowl, mix 2 tablespoons of rice vinegar, 1 tablespoon of sugar, and 1 teaspoon of salt.
- Heat the mixture in the microwave or on the stove just enough to dissolve the sugar and salt.

5. Season the rice: After the rice has rested, transfer it to a large bowl (preferably a sushi tub or wooden hangiri). While the rice is still warm, gently stir the vinegar dressing into the rice with a wooden spoon or rice spatula, using chopping motions to avoid crushing the rice.

6. Cool the rice: Let the seasoned rice cool to room temperature before using it to make sushi. It's best to use it immediately, but you can cover it with a damp cloth to prevent it from drying out.
