Japanese soy sauce
-
Mirin (Japanese sweet rice wine)
-
Instant dashi (Japanese stock powder)

From the usual supermarket:
-
2 pork chops (boneless, loin or sirloin)
-
2 large eggs
-
1 small onion cut into thin strips
-
Flour
-
Vegetable oil for frying
-
Salt and pepper to taste
🍳 Step-by-step preparation
1. Cook the rice
Rinse the Japanese rice thoroughly until the water runs clear. Cook according to the package instructions and keep covered to keep warm.
2. Prepare the chop (tonkatsu)
-
Lightly season the chops with salt and pepper and coat them first in flour, then beaten egg, and finally in panko, pressing well to ensure they adhere.
-
Fry them in plenty of hot oil until golden brown and crispy (about 4-5 minutes per side). Set aside on absorbent paper and cut into thick strips.
3. Prepare the sauce
In a large pan mix:
-
150ml of water
-
1 teaspoon instant dashi
-
2 tablespoons of soy sauce
-
2 tablespoons of mirin
Bring the mixture to a gentle boil.
Quick alternative: If you prefer a faster and easier option, use OKIDOKI Tonkatsu sauce directly.
4. Finish the katsudon
-
Add the chopped onion to the boiling sauce (or heated Tonkatsu sauce) and cook until translucent (approx. 2 minutes).
-
Place the fried pork chop strips on top of the onion, pour the beaten eggs lightly over them, and cover the pan.
-
Cook over medium-low heat until the egg sets slightly (1-2 minutes).
5. Serve your katsudon
Serve rice in a bowl, carefully slide the pork chop, onion, and egg mixture over the rice, and garnish with chopped fresh chives if desired.
